Tortellini Tomato Spinach Soup
If you want a quick and healthy recipe, Tortellini tomato spinach soup is very easy to make and delicious to eat.
- 1/4 Cup Grated Parmesan Cheese
- 10 Ounces Chopped Spinach
- Cracked Black Pepper
- 9 Ounces Packaged Tortellini
- 14 Ounces Coarsely Chopped Whole Tomatoes
- 4-6 Ounces Vegetable Broth
- 1 Garlic Clove Minced
- 1/2 Cup Minced Onion (About half of a small onion)
- 1 Table Spoon Olive Oil
Heat the olive oil over medium-high heat in your favorite soup pot.
Put the garlic and onions to your pot and Sauté them, stir occasionally for about 5 to 7 minutes or until the onions are translucent.
Add the tomatoes and vegetable broth into your pot and turn the heat up until the mixture comes to a boil. Stir Occasionally.
Add the tortellini and cook according to package instructions.
When the tortellini is finished cooking add the spinach, salt and pepper to taste. Be careful when tasting as the soup may be hot.
Find the nearest ladle and prepare for take off. Use Parmesan Cheese as garnishment.
